And Skyrim is on my list to play. I'm thinking about role-playing and making a story out of my characters exploits. Would anyone here be interested in that type of gameplay?

I've seen skyrim let's plays with over million views, so I assume yes.

Maybe maybe not. If you are just starting out it is going to take quite some time to build up viewership.

At first I would not worry about the viewership and just do it for fun. If people like it then it is a bonus.

I don't see the fun in watching a stranger play a game, and thus never seen a Let's Play for more than a few seconds. I much rather play the game myself.

So no, not interested at all.

Having fun is the whole point.

I also would like to entertain others. Why I asked. Won't be recording until sometime next month (working towards recording equipment), but just want to see what others would like to watch gameplay wise. I know I want to do a role-play with Skyrim and maybe Fallout 3. Trying to avoid any stereotypes though.

If you are looking to roll play the character then it is important to let the character be the one deciding what to do and what quests to be done. Plan on some of it before but let the game decide the path/ Maybe an encounter happens that has a large impact on the character and forges a different path for the character.

I would recommend making the Pilot Episode being the one where you explain the Character's story, and it's creation during the creator phase of the game.
