So I just got my R9 290. I love it, it runs great. The only think is on Advanced Warfare it says I only have 2850 dedicated video memory. Shouldn't that be 4000?

Maybe game bug, some GTX 980 users from a quick google search are also having this issue.
It could be driver related, and it could be game related as well. Obviously the game measures only the remaining GPU VRAM, instead of the maximum amount of it.
If that's the case, there is nothing to be afraid. But it could be that the game has a problem to realize the whole VRAM of R9 related GPUs !!!
I have seen a report, wit the same problem with an R9 290X GPU.
I'm having some major problems with this game, the only way I can run it without crashing is to put texture settings to lowest. It crashes midway through loading the very first level, I cannot get past that stage whatsoever.
Anything higher texture setting wise than LOW I get what I guess is a memory leak and game crashes so fckin hard I have to hard reset my PC...
oh and when i say memory leak i dont mean Windows, the memory usage never goes above 7gb in windows, it's the graphic card memory.... first off it only reads like 3400 memory for my 290x, and i don't thing crossfire is working...
anyway anyone else with this issue

This could be fixed with a new set of drivers from AMD, or with a game patch from Activision.
I see, I let the game automatically configure my settings, it auto sets everything to the highest setting. Including those things that say to only use with a 4GB GPU. So somewhere it must recognize my VRAM. The game was running choppy at first last night but it smoothed out so I am guessing that was my internet connection. I also thought it would run at 60FPS but I don't think it is. I just want to make sure, I am running this with an Intel i5 3570 3.40GHz. There isn't going to be any bottle necking with that is there? IDK It might just be poor optimization oor poor drivers, or both. Evolve runs at 1080- 60FPS max settings. I just see all these other videos on Youtube of these guys with the same card running every game at 60fps. What am I doing different?

You have one monitor to "play" with, and another for your desktop, RIGHT ??? You can try to operate with the one monitor, and see if you get any better results.
I thing your cpu is just fine for that card. However, you can see the load from your CPU and GPU with HWmonitor. -> http://www.cpuid.com/softwares/hwmonitor.html
You should look under utilizations. (if your GPU is working hard but the CPU isn't doing much, then you have a GPU bottleneck, and vice versa)

Lastly, bottlenecking depends heavily on the game and resolution you play at. (There are games that stresses the CPU to the limit, and the same goes for the GPU)
And there is always a chance, that a game can be poorly optimized, and so it won't matter how much power you have.
I ran hardware monitor while playing Evolve, the spot that says Value jumped all over the place, min says 0% and Max has GPU at 100% and CPU at 77%. What does that mean?
It just means, that you could use a stronger GPU, if you wanted too, with that processor.
However, as it is, it's a very good match. Obviously in another game, those results could be very different, so don't bother with that.

My Sennheiser headset is starting to get weak in the left speaker. Funny thing, it's the second headset as I replaced once before for the exact same issue.

I'm giving up on buying high end headphones. I just need something affordable and decent.
Not much to say of it from a couple of video reviews. TotalBiscuit even mentions how it doesn't even provide any performance enhancements over an Ubuntu distro.
