When I used UFO it was easy, I just asked them what they were good at and the mod showed me. But now I'm using AFT it either doesn't have that ability or it's very well hidden. Can someone tell me if AFT has that function, or alternatively is there another little mod that'll do the same thing?

Yes, it has that function, as well as the options to set the skills and combat styles yourself if you want.

Tweak Options -> Info -> View I believe.

Hmm, interesting. With all the mountain of other things it seems to do I thought it was odd that it didn't do that, especially with its abilities to customise followers (even one's who're not meant to be followers!) to do what you want. Unlike UFO it's just a bit vague I guess.
