Character build help?

I'm considering restarting Skyrim, but I'm honestly having too hard a time choosing a playstyle. As someone who has played hundreds, if not thousands of hours of Skyrim, I know a lot of the hidden tricks and secrets to making a powerful character easily. (I'm playing on console, so no mods, sadly)

Anyway, usually I either play tank, swordsman or destruction Mage, all generally end up melding into stealth expert and everything expert, voluntarily or no. This time, I want to try play a new way to play- like, full RP. Not joining every guild, completing every quest and looting every dungeon.

My current ideas are;

Thief/ Brotherhood
Alteration, Illusion and Conjuration Mage
Probably Winterhold College
No armour. Period.
Vampire (Dawnguard expansion)
No house, I only have what I can carry with me
The only weapon I'd carry is a dagger

Only thing is, TG, DB and College feels like too many guilds, albeit that the first two are extremely similar, and using magic makes sense for stealthy things, and being part of Volkihar is also a good choice for being stealth bonuses and the DG expansion providing a lot of Conjuration magic
However, levelling up a good portion of my magic skills and several thief skills feels too much to do, and using bound weapons just feels too much like a cheap get around of my no-weapons no-destruction rule.

Thoughts? Should I do a more thief focused run or a more magic focused run rather than try to do both or is this a decent plan? If I were to go full-magic, I'd likely play a support character and rely on summons and companions to do my killing while I provide healing and buffs.
