If you could have any kind of weapon that doesnt exist in Skyrim for your character what would it be? It could be a weapon from another RPG or in anime, movies etc anything.

Kinda looks like a Daedric weapon on steroids.

Sasuke's sword Kusanagi or Ichigo's Bankai form zanpaktou.

I've seen lots of discussions about spears but I'd love a quarterstaff. It should have a significant chance to disarm. This would really help with PCs who don't want to kill opponents. A combination of disarming and Calm would be lots of fun.

Edit: I loved those flaming oil flasks in the old AD&D game. It wouldn't be hard to do given that you can make those exploding spiders over in Solstheim.

Mine would be a Rapier with a Parrying Dagger in my left hand, actually used as for parrying

I can not recall where I first read about a "hero" using this combination, but I have liked the idea for quite some time

Throwing knives.

Poleaxe

Whips (barbed and regular), nets, parrying daggers, bolas, flails, the aforementioned quarterstaves, throwing daggers/axes.

Basically any weapon that can help add a little nuance to combat would be great

I've always the simplicity of staves. Not in their use, but in that have so many uses mundane and martial. The walking stick suddenly turned into a weapon as always intrigued me

I'd love to take my real-life horsebow into the game.

Also, Ronon Dex's gun from Stargate Atlantis. I could choose to either stun or kill opponents. It's also a cool weapon...
