I don't do "builds" either. I create characters, and my characters may identify with a certain class or profession that may affect what types of weapons and armor they use, whether they use weapons and armor at all, whether they use magic, and if so what types.
My current character is a Nord barbarian, who mostly uses 2H weapons, light armor and when necessary, he uses a bow. He also does some smiting and alchemy, though not many perks there.
Why did I pick this? Well, I wanted a simple character to test my load order. I had no intention of playing him very long, as he was just a test character, but the load order went together quickly without issues and I ended up really enjoying playing him, so he is going to be a long term character. 120 hours so far.
He ended up doing some homesteading near Falkreath. At first, he just bought the land so he could build a smelter, since there is no freaking smelter anywhere near Falkreath/Riverwood (Bethesda why did you skimp so on smelters?!?). After building a smelter, he decided it would be warmer to sleep inside the cabin and now he is growing soft, sleeping in a warm bed all the time.
As he gets older and softer, he realized he might need to be more flexible about using a little magic, so he's picked up a couple spells here and there and now can cast a simple healing spell and a simple spell that lets him jump down to a safe landing spot. He hasn't put any perks into magic skills yet, and with my mods, it takes all his magicka just to cast healing once. So, he is not by any means a mage, but just this little bit of magic means he can go deeper into dungeons without running out of healing potions (no health regen in my game, not even when resting).
So, he's becoming more of a ranger than a true barbarian, with all the sleeping in soft beds and even using a little magic, but he views it as evolving rather than just getting old and soft. And he quickly learned that he would need to evolve to survive against mages and vampires . . .
