It is, to my understanding, that GOG takes old games that are hard to run, optimize them for modern machines, and distribute them from their online platform. I just bought Battlespire and Redguard on GOG, and I was given copies of Arena and Daggerfall. I have played, and conquered, both Arena and Daggerfall. While I'm sure they didn't do a complete overhaul of the game, I downloaded Daggerfall to see what, if anything, was different. So, is there any real difference from the copies on the Elder Scrolls website? The biggest thing I noticed was that I didn't need to manually install Daggerfall, much like the ES Anthology disc version. Is there any other difference?
