I find your statement very puzzling.
Why would a 'just-bones-and-skin' character be strong? Why would an obese character be fast or have high endurance? Stats were a thing in the time of table-top RPGs because there was no better way to represent your character's physique or abilities. Now that we have the technology to modify our character's appearence to make him look strong or agile or whatever, the logical thing to do would be to tie that physical appearence to the strengh, dexterity etc. he would be displaying in game.
Why would you not like that?
This wouldn't bother me either way. I like to play with a limited weight threshold, in skyrim I dropped it down to about 75 so I only had space for one set of heavy armour or the like. But I could if I wanted to reflect my characters carry weight with their strength number.
I hope there is tattoos and some sort of injuries like limbing or missing fingers and such.
I doubt that every dweller sported 2 eyes and full set of fingers.
Cause some people like super-strong skinny people, or because "it's a game who cares ?" or they want to be acrofatic, etc. Also, have you seen how big and buff super mutants are ? No amount of realistic musculature should allow you to beat them in a slug fest, yet you totally can stomp all over them. Hell in FO3 I punched a *Behemoth* to death.
Because it doesn't add anything to the experience for me, and I want to have the freedom to make whatever kind of character I want without having to worry about how their appearance affects my gameplay. I much prefer the freedom to make mold-breaker kinds of characters over the added sense of realism from having my appearance reflect my stats.
In a universe where I can paralyze a Deathclaw with a punch and recover from crippled limbs and gunshot wounds with Stimpaks, I'm really not too fussed about that level of realism.
