I can connect them. I can disconnect ONE end, but I cannot disconnect both (removing the wire).

How does one achieve the removal of a wire connecting two objects in Fallout 4 please?

When in Workshop mode, hover over the wire and hit Tab. This will store the wire and you can use it again later.
