when you trade with your trader, how do I invest and what does it do? it's just greyed out on my menu...

it gives the trader more money to buy things from you i believe, e.g. if the trader has 2500 caps and you invest 500 caps, the trader will have an extra 500 caps (3000 in total) from now on allowing you to sell more stuff to him

To invest requires a perk, I believe.
