Save 1 Biometric Scanner and 1 Military Grade Circut Board, I won't spoil why but you need them and there a pain in the ass to find again if you waste them like I did.
Other then that I don't know what else you need to save, I'm still only 20ish% into this game.
I would say that you want to sell very little of it. All of it can be used in construction at any of your outposts. Since you obviously don't want to carry that around everywhere you can drop it off at a "Workshop" at an outpost. That's the red workbench where you start building stuff. I suggest putting everything in the one at Sanctuary and moving it to other locations as needed. Better to use it then sell it. Caps don't seem quite as useful in this game from what I've seen so far.
If he does nothing, ask him to do tricks
Prewar money is expensive and its a much better option to sell it than scrap it
So far I have found that these scrap-able items can also be used whole in recipes:
Abraxo Cleaner
Antifreeze Bottles
Baseballs
Bloatfly Gland
Blood Sac
The rocket, alien, teddy bears, lunchboxes are nice to display in your house
But yes, pretty much scrap everything...
