I've been looting a lot of special weapons from legendary enemies that are just not as good as the ones that I use/have equipped. What do you guys end up doing with this? I've just been storing most of them in my workshop.

Break down for scrap. Excellent source of awkward materials if you've got the right perks.
But I thought you couldn't break down special weapons/armor?
The only thing I haven't been able to break down so far are explosives. Every other weapon I've had I've been able to scrap. Maybe I haven't yet found a "special" weapon yet. I've broken down plenty of legendary ones.
Nah, you can't scrap stuff you get from legendary encounters.
Weapons with stars next to them. I can't ever scrap those.
I'll have to double check tonight but I'm sure I've managed to scrap some of those. Usually through the modding bench.
Oh well, if I'm wrong and you can't then they're a good source of caps.
I store them in my safe. A shame you can't have some kind of display..
Some are fixed, some are gained via quests but most are gained on special enemies marked as legendary (like Legendary Raider, Legendary Feral Ghoul, etc.) and some glowing animals. You might have seen one under Master lock in Vault 111.
Random spawns, the higher your difficulty the more there are
I met first legendary already when helping Preston but I started @Survival difficulty. Higher diff = more legendaries. I sometimes had 2-3 at the same time.
Diamond city guards killed my first one, but yea facing two or three at a time can make survival mode hard to survive
Remember that you can also mod special weapons, smart here is building on the features they have.
I'm waiting to see if I can build a display case later in the game. Haven't really messed with settlements yet, but I plan on putting all unique items on display.
Well, that's just fantastic, isn't it. I had hoped those nice tool boards were interactive, but no.

I was keeping them so I could sell them, but it seems that the vendors are all poor mofos and have no money to buy it.
I made showcase wall behind crafting stations in my warehouse with separate shelves for Melee/Armor/Ranged and I put all unique items there if I do not use them. Each time I visit warehouse for crafting/dumping loot, I see those showcases on background as reflection of my achievements during game
