Driving me nuts!!!

I check my settlement status via my PipBoy and it occasionally blatantly lies to me! The other day it told me I only had 3 beds instead of the 7 I normally have there, so thinking I've been attacked by a gang of bed thieving Raiders, I run all the way back (I don't do fast travelling), and my beds are fine! I have 7! Same for food and power. One time my PipBoy told me I had no power and everyone was miserable!! So I leg it all the way back, and I do have power, and everyone is perfectly happy!!!

yup keeps saying my sanctuary hills has 0 food and defense and every time I come back I actually have 12 food and 40 defense

This is a bug that happens when you fast travel between settlements sometimes (ie, from one settlement to another). Go to the settlement that is showing wrong, leave it by walking, then fast travel back. After that, just remember to walk out of your current settlement before fast travelling to a new one so it doesn't happen again. It seems to be more than a visual glitch, as I've lost happiness due to a lack of beds and water before from this bug.

i have 20 settlers in sanctuary hills with 46 water 36 food 23 beds 324 defense and happiness won't go higher than 86% then drops down to 54% and back up again. but now after reading this i should now be able to get the 100% happyness achievement for xbox one then the level 50 achievement and i'm currently lvl 48

Food needs someone tending it and so do defences unless they are turrets

I've noticed this too. What really bothers me is what was mentioned above: all my settlers have plenty of everything - not a single need is in the red, yet their happiness will abruptly dip from 75% to 54%. I check to see what's up, and it's nothing. They still have everything they need. Very frustrating.

Yeah it's a bug that will need an official patch, this isn't something for the modders to fix.

I see it mostly in Sanctuary, telling me I have no food, water or defenses. It svcks because it does affect happiness when you're not around.

The one that really got me, though, was I had just left the Drive-In with 18 settlers. About 10 minutes later I check my Pip-boy and it says I have 35. I was like where did all these people suddenly come from? So I go back, build a giant water purifier in that little pond and get ready to build a bunch of beds when I realize it's back to 18.
