Is there a mod to play the game just in black in white, similar to the beginning/ending cut scenes?

Probably not possible (at least, not without a lot of effort) but there's a potential solution: If you change the tint setting on your monitor to 0 (like I can on my Samsung monitor) you will get a black and white image.

Maybe if you can get a post-process add-on like ENB, you can customize your own black-and-white preset. I'm sure there's a way to do it in-game, but until the editor comes out I don't think it would be easy.
