Cait just jumped in a spare set at Red Rocket and I don't know how to get her out of it

It's one of the Talk options. But there are some situations where other dialogue trees will take precedence and you can't see it until you clear those options.

If you don't get the talk option, dismiss them (ask them to join you if they not already with you) and they usually exit the armor.
