Is there a way to unequip weapons and such from residents?

Yes, when you click the dweller you see their stats and then you see the outfit they are wearing and the weapon they are using. When you click on the outfit you will see the outfits available. If non are available then use the vault suit. Equipping the vault suit effectively removes the other outfit they are wearing. Same with weapons, choose the fist.
