Other than kicking butt and taking names, which he obviously enjoys, what else will boost his affinity?

Strong like smashing and sharing. Why you no smash, why you no share? Strong don't like that!

Also, supposedly, cannibalism.

Combat (not so much against super mutants), cannibalism i would bet (not sure), and intimidation feats during conversation.

Just having him as a companion seems to slowly make you grow on him. I think it's the same with all companions, that despite the likes and dislike you gain a few points with them every hour or so.

He likes it when you talk tough when taking radiant quests and he does enjoy watching you eat humans.

I don't think my character is the type to resort to cannibalism just to impress a guy, even if he is tall, dark and gruesome.

Sounds like killing raiders it is. No wonder Strong enjoyed out little field trip to Pickman's Gallery. And here I thought he just liked the artwork.

I'm pretty sure he likes giving Mama Murphey chems, but I'm not 100% sure on that.

Edit: Never mind, Strong dislikes giving chems to Mama Murphy.
