mods come down to a persons personal tastes, what one person thinks is great another thinks is crap.. my best suggestion is play it vanilla a bit first, find what you don't like or would like to see improvement on or added to the game, and look for mods based on what you want improved upon

Start with the essentials:

Unofficial Legendary Edition Patch

SkyUI

Run For Your Lives

When Vampires Attack

I consider both Live Another Life (LAL) and Open Cities Skyrim (OCS), if you like open cities without a loading screen, as essential mods along with the Trade & Barter and the Amazing Follower Tweaks (AFT) mod.

Enhanced Skyrim Factions - The Companions Guild by Dreamking. This mod may make too many changes for someone new, but it does bring a lot of life to the questline that I wish had been there the first time I played. It will need an Open Cities patch if you go that route.

I agree with funnybunny that mods are personal preference. I tend to like old school roleplay mechanics, so my mod selection reflects that. My favorite mod is Requiem but its too much for most people. Requiem makes Run for Your Lives and When Vampires Attack redundant, otherwise I would consider those essential. Anyway, to the extent my list is helpful to you, I can tell you what I am running.

My own personal must have mods are:

Requiem

SkyUI
iHUD
Less Intrusive HUD
Warburgs Paper Map
USLEEP
Flora respawn fix (and Requiem patch)
Alternate Start (plus Requiem patch)
Violens (plus Requiem patch)
Even Better Quest Objectives
Immersive Ingestibles (plus Requiem patch)
Not a Sneak Thief
Convenient Horses
Point the Way

I'm currently also using a bunch of other mods that add flavor to the game but are not necessary to my enjoyment of the game. Those include:

WATER (from ruffled feather)
Argonian Access (from ruffled feather)
SMIM lite
SkyHD lite
AMidianborn
SFO 1.87
ETaC Complete (plus Requiem patch)
JK Skyrim major cities
Immersive College of Winterhold (plus Requiem patch)
Apocalypse (plus Requiem patch)
Wintermyst (plus Requiem patch)
Climates of Tamriel (only the main file, not any that affect indoor spaces)
Realistic Lighting Overhaul (only the dungeons module)
Frostfall (I still use version 2.6)(plus Requiem patch)
Wet and Cold
AOS2 (plus requiem patch)
WAFR (plus Requiem patch)
CCF (plus Requiem patch)
CCO (plus Requiem patch)
DynDoLOD (without the esp, I only use the static LOD)
Skyfalls/Skymills

LOL, I just read your signature Turija and it's hilarious. Is it from any game in particular?

I think a good point was made... play vanilla for a bit and find out what you don't like.. find mod's that change that.

Other than these ^^ most are really personal choices...

I added those plus some of these are my 1st batch of downloads ( I used Satellite interent.. plus cell phone as a hot spot. ) so my data was and still is limited

LOOT...though NMM has it

NMM

Minimal HUD ( which different than I-Hud ..personal choice )

Alternate Start- LaL

A Quality Wold map

Immersive Armors

Racemenu ( and everything needed for it )

Wyre Bash

UNP Dimonaized

Dog's of Skyrim

No More Blocky Faces ( many face and body meshes now have this)

Convenient Horses

. I spent 4 yrs playing on 360... when I got my PC.. I already knew exactly what I wanted to change and which mod's I wanted to get... Some thing's I picked as 1st batch were not only because I wanted them...but file size.. they errr fit into the jig-saw that was my data limit... I added a bunch more when my data cycle renewed.

One thing you may want to do is go onto the Nexus and look at the Body/ face meshes and what you like the most... then check the armors... I mean their is no reason to load that CBBE only armor... if you plan on using UNP.

Also make a list of the mod's you want and their requirements... check those out.. then check out any requirements the requirements need... Trust me, it beat's thinking you have every thing you need... only to CDT on load up... and have to come and ask... then do a step by step check and research of each mod.

Besides the unofficial legendary patch, the only other mod I consider completely essential is Alternate Start: Live Another Life. Not only for its alternate starts, but because it gives the game a space to load mods. The opening cart ride of the vanilla start is notorious for glitching out with a large mod list. So even if you prefer that start, ASLAL is very helpful, and it does include that start option.

Look for a mod on Nexus called Skyrim Stability Guide (which is not actually a mod). It will teach you many things not to do. Basically, ignore all "power gamer" tips. They just break things.
