I'm not sure, but my guess would be it's a glitch in the physics engine.

Occasionally the clipping glitches, usually do to unusual and/or complex shapes. So a body, which is a movable object can get stuck in something. Then the physics engine attempts to respond. But since a body being stuck inside some other structure is an abnormality, it has a tough time deciding what to do. At least that's what I suspect.

I've seen that would gates a lot. If you kill something near a movable gate it might get stuck in the gate and jitter.

The video, however, is surprising to me. Because it shows a bed moving. In the game I though Beds where not moveable, ever.

By Tor and the Snow Dog... This looks like an entity out of the Stephen King novels...

Never seen it in Obilvion, but has seen it once in fallout 3. Now as you saw in the video a stretched out enemy is very hard to hit. My luck it happened on a ghoul reaver, one of the most lethal monsters in fallout, load of health and an powerful area effect ranged attack.
Yes I managed to kill it but it was a nightmare fight.

The one shown in the OP can be recreated by placing a dead body in a door way, then closing the door. :D

Yeah.. for me once, an ENTIRE ghostly warrior got stuck in the walls of an ayleid tomb, and the lines of his body would writhe and distort across the entire tomb, making terrible desperate thumping noises. I got the hell out of there.

the ayleid ruins are some of my favourite exploration routes. There's some creepiness in them... if something like this happens, dear lord.
