This mod aims to do two things.
First, it changes the rate at which the pickable plants respawn. No more staying away from that cell for 3 days and then trying to remember where the plant is. Default plants' respawn timers gets reset on cell loads. This changes it so that each plant keeps its own timer (only runs on load, so no worries about performance) that ignores cell visitation by the player.
Second, it makes it so that a Maize (corn) plant with two ears on it actually gives you two ears of corn instead of one (what, are you so inept at survival that you can't even harvest an ear of corn?). It does this for all plants, the number of the item on the plant is the number you get. This will have the side effect of making some food items much easier to make, but you know what, oh well.
Compatibility
This will be incompatible with any mod that alters the pickable plant scripts, otherwise you'll be right as rain.
Other Info
The respawn rate is controlled by a global variable called PlantRespawnRate. It is default at 1.5 days, but you can easily change it. Just remember that opening the console prevents you from earning achievements.

Future Plans
The plan is to expand the plants that can be picked (and possibly add recipes that can be made) in future versions. I would also like to implement a Survival skill check/bonus as well as a few other small changes.
I might eventually create new recipes if I get far enough to include new plant types. But as it stands, I'll leave recipes to others, and just make a way to harvest the raw ingredients. If this does move to the point of creating new food items, I will make a master version others can use.
Related to this, I was considering hiding fun recipes in the current selection that only appear when you meet certain condition(s). While I fancy myself as creative, I'm not particularly adept at coming up with fun stuff in that vein. So this thread is also an open suggestion form for ideas for fun or silly recipes that can be made with harvest-able food items.
To accomplish these additional features, I'll need new meshes. Preferably meshes that have animations. So I'll need help with that, as Blender literally will not work properly on my computer.
