Nobles are rich to the point that they can do about anything they'd like for entertainment, but we're mostly just shown that stuff inside their castle with the dinner party or painting, etc. Shouldn't there be a kennel of hunting dogs around? We've got to inject some more personality into these guys. How about their flashy chariot drawn by a quadriga of bears? The baron having drinking contests with the peasants to show how manly he is? Instead of falconry, they can have trained imps for that, who blast birds with lightning spells.
There can be a practical edge to some of that as well, like Mr. Burns on the Simpsons saying, "Release the hounds!". If you're a thief trying to rob the palace, the guards should come with attack dogs to hunt you down. Dog interactions were handled pretty well with call of duty 4, from the first person perspective.
