Those type of mods are not included in any overhaul as far as I know. However, there are a number of notable mods that cover those bases. Try http://www.gamesas.com/index.php?/topic/1053088-deltes-thread-of-immersion-mods/, http://www.tesnexus.com/downloads/file.php?id=8273 and the http://www.tesnexus.com/downloads/file.php?id=5197.

Make sure to get COBL. That mod will expand your options to the most the Oblivion community has to offer, as far as realism mods go. For thirst, the big one is Let The People Drink. Once you have COBL, you should get the COBL compatible versions of the Real Hunger, Real Sleep and Real Fatigue type mods.

Edit: more...
http://www.gamesas.com/index.php?/topic/1049541-relzwipz-tejons-thread-o-mods/page__view__findpost__p__15736124__hl__Tejon__fromsearch__1 has a nice mod that handles fatigues and much more, along with a bunch of other nice mods.
http://www.gamesas.com/index.php?/topic/1066588-relz-sm-mod-collection/page__p__15497096__fromsearch__1&#entry15497096has designed a number of realism mods.
I use many mods created by both of the above modders. The other utility you need to make broaden your choices is OBSE. There is a link at the top of Strategy Master's mod list.

For hunger/thirst/sleep take a look at http://www.gamesas.com/index.php?/topic/1069984-simple-essentials-question/page__hl__Simple%20Essentials The mod is called Simple Essentials and is by Skycaptain. It's not available on the Nexus, but there is a direct link to it in the thread. It's a beta but I, and many others have been using it happily for over a year. There's no readme in the download, but full instructions are there in the thread.

http://amito.freehostia.com/Oblivion/OB-mods.htm is great because she has a thorough review of each mod. You should especially look at her "Survival" category.

You can already spring in Vanilla Oblivion? Is there something more specific you are looking for? I use Strategy Master's http://www.tesnexus.com/downloads/file.php?id=12074 mod. You have to walk at a certain level of encumbrance, you cannot run forever (at default settings, even when at a high level it seems) and there are various boosts you get for carrying weight less than half your encumbrance capacity. The INI lets you tweak this mod more to suit your tastes (i.e., getting rid of the damage to health at certain levels of encumbrance, changing the strength-weight relationship multiplier or disabling unlimited encumbrance.)
