Not saying Gothic is better overall. I like both of them, but one thing I've felt is the TES quest often seem to only change dialog and NPC reactions to you. The main quests in both TES and Gothic games have you affecting the world some, but the other TES side quest make the world feel static. Morrowind had quests where you could build your own house/outpost and that was fun because you changed the world. I want more of this. Don't get me wrong, the TES games offer a larger sand box filled with more diversity than Gothic, but what good is a sandbox unless I can shape and mold things in it.
The changes don't have to all be epic. Take the Oblivion quest where you help a couple sons on a farm to fight of some goblins, saving their lives in the process. Instead of the sons simply greeting me with a high disposition greeting and the dad giving me a quest reward, I want them to invite me over for a drink/party that night, heck the dad seemed to be an alcoholic I'm sure he would offer me something. At the party, perhaps in slurred speech the would tell me, "You have a place to stay anytime you're want friend." I would surely do this if someone saved my kids lives. This example came from off the top of my head. I just asked myself as an NPC WWMRB, what would my reaction be.
