Anyone done this?

I usually start a new one after a guild or two..

but soon I plan to do every quest possible with 1 character, meaning every guild, expansion, side quest...

this will just be a powerhouse character... not interested in roleplaying or immersion.. just lots of gold and weapons.

I have, it wasn't all that fun, but I just did it for the sense of "Hey I've done all quests, woo"

I've done all the quests and questlines, but not with the same character.

My characters have gradually gotten more and more limited, defined and deeply into RP. I'm grateful that I've seen all the quests though before I finally got to my current character. That way, as she wrinkles her nose at most of the quests, I don't mind. :)

I've only done it on one character and I thought it was pretty fun. Once you get like every artifact from every questline its cool to put them on display and switch equipment in between dungeon crawls. The reason I've only done it once is because like you said it doesn't really fit in with roleplaying.

Just finished the main quest. Fighters and mages guild are all complete. Dunno if I turn my character to the "dark side" or start the game all over again as a thief and murderer...

The idea doesn't appeal to me. I go in the opposite direction: only one character has done the main quest, and none of my characters have done Shivering Isles, Mages Guild, Thieves Guild, Dark Brotherhood, most of the Arena and Fighters Guild.

No, I don't do that on my characters. However, I did make a save on one character just to try out each guild and expirence each storyline. I was Level 24 and I didn't want to start 4 new characters to try something I wasn't even going to keep on my main character.

Now I take the rank requirements from the guilds in Morrowind to advance their story (I use the Morag Tong requirements for the Dark Brotherhood.) Basically, I won't accept the quest to stop Mannimarco until I have at least one Magic skill at 90 and two at 35.

I only play the Mages' Guild quests now, I didn't like the Fighters' Guild story, I didn't like breaking into people's houses to advance my rank, so I don't play Thieves' Guild, and I don't play Dark Brotherhood because I don't like murdering people.

No.

In neither of my two play-throughs has my avatar joined the Thief or Assassin guild. I doubt any avatar will. The only way I could see that happen is if the the game had been programmed so that one could join those organizations as an undercover agent for, say, the Legion or Elder Council with the intent of bringing criminals to justice.

I also wish that the game offered more to do once one becomes the head of a guild, but that's another subject.

One of my latest characters was an attempt NOT to join anything. No Guilds, no Blades, no Knight of the ... but then Gilen's wife talked her into visiting Seridur, and I'd forgotten about that being a conscription, rather than an offer she could refuse. So she's a Sister of the Virtuous Blood and nothing else on that page. Almost collected all the statues for Umbocano, and has four of the seven Goblin tribal totem staves so far (plus she kept the identical-looking one from the tutorial), and is actively looking for other collections (other than Nirnroot!)

I've never particularly enjoyed making a "one size fits all" character. I prefer specializing, more uniqueness in a character. But I suppose that's one of those things you have to do at least once.
