If you're concerned about this, you might want to consider a couple factors. First, New Vegas was developed by Obsidian, not Bethesda, and I'd imagine the decision to have it end with the completion of the main quest was made by Obsidian, would Bethesda have done the same if they developed New Vegas? I don't know, but since Bethesda later released a DLC that retconned Fallout 3's difinite ending and let you continue playing after the main quest was finished, this might mean that Bethesda decided that having the game end after completing the main quest was a bad idea, an opinion that clearly was not shared by Obsidian, but we're here to discuss a game being made by Bethesda, not Obsidian, second, Fallout New Vegas is, as its name implies, a Fallout game, not an Elder Scrolls game. Being able to play after the main quest is a trend that is well routed in the Elder Scrolls, this is not so for Fallout, so while one can make a Fallout game that ends with the completion of the main quest without angering Fallout fans, I'm sure many Elder Scrolls fans would be displeased if they did so for the Elder Scrolls. Considering these factors, I think it's unlikely that Skyrim will end with the completion of the main quest. I can't give any guarentees, of course, since I've heard no official confirmation on the matter, but personally, I think the game will be like Morrowind and Oblivion in the sense that once you complete the main quest, that's simply the end of that storyline, you can still continue the rest of the game, if you so choose.
