Morrowind.exe & MGE do a much better job of running at 1680x1050 when you actually set Morrowind.exe to Run As Administrator

I'm not sure what res I was running at before but fonts are a lot smaller now and my fps took a big hit.

Sorry, I forgot to mention I'm actually using the latest MGE XE.

Chances are the game was using the default resolutions before you selected Run As Admin.
That's just how annoying Win7 is.
