I think what you are referring to is a Yak.

And Yes, Skyrim should totally have these.

Muskox might be a better fit though as they coexisted with Mammoths and are Nordic creatures. But they are smaller and not as bovine-like. Good replacement for domestic cattle though.

Definitely makes sense to me - I was surprised when I realised horses couldn't carry anything for you in Oblivion, it just seems like an obvious thing to do to me.

If you mean pack mules, I would love to see pack mules.

Animals you can use to carry loot and gear, but animals that roam in packs would be cool too, although I think Bethesda has done that already with the deer in Oblivion and the wolves on Solsthiem.

Horse and cart. Each will take up a "follower slot". Horse and cart can't fight for you but increases your traveling speed and carrying capacity. Normal followers will aid you more in fighting, but won't allow you to travel as fast and be limited to your own (more realistic, but not fully realistic) carrying capabilities. We can't have it all, it's a choice we'll make that suits our playstyle. Maybe traveling merchants would have a dwarf mammoth (or a donkey) for carrying, but it can't be mounted and he is a walker. Larger mammoths could be used as strider services.

I don't want this game to become loot oriented. It's better if you carry what you can carry yourself and makes you appreciate and care more for every piece of your equipment.

Not for this game. For an isometricRPG, of course.
