What do varla stones do and Ayleid statues do.

Varla Stones will recharge all enchanted weapons, but after using them they'll be destroyed, that, or you can sell them for a very high price. Ayleid statues should be turned over to Umbacano, he lives in the Imperial City in the Talos Plaza District. After you hand over a statue a questline regarding his Ayleid fascination begins.

It does conflict with another quest involving Umbacano though which can break mentioned quest so exercise caution

Dont accept the next quest of Umbercano until you have given him all 10 statues.
