you could role play a character that is obsessed with deadric princes and do all of their quests and then make a museum out of the reward artifacts. Kind of random but i thought I'd just put it out there.

Female Breton fighter. She's mute, so she's effectively permanently silenced and can't cast any spells at all. Growing up unable to use magic in a society that values it as much as Breton society does, she dedicated herself to combat. Have her use light or no armor and preferably a claymore, so she can use her reach to avoid damage - all form and grace and timing rather than an armored tank.

Orc illusionist. He fancies himself something of a ladies man and a wheeler-dealer, but, of course, he's an Orc. He uses illusion to compensate for that by charming people, and he uses it to protect himself. Maybe have him going through some inner turmoil over it - maybe he really wants to try his hand at dealing with the world without the aid of illusion, or maybe he's been doing it for so long that he's starting to lose track of reality himself.

Just off the top of my head.....

Play a Breton Mage, focusing solely on Magic and the Blade. I've done this and left out Illusion as a Major Skill as I don't really use it much, plus its really easy to level it up.
I use Alternative Start and am role playing as I came to Cyrodiil as a Monk, but that I have recently turned to the Mages Guild to help further my skills and my relationship with Nature. Hopefully I can find a mod that adds an item that makes all animals friendly with you

A Mage that doesn't use destruction is always pretty fun.

I just started a drunken Nord barbarian, who swills cheap wine on a regular basis. He's got low Personality to begin with, and the wine lowers it even further, so he gets some pretty funny reactions from NPCs. In addition to that, I use a mod called "Clothing Matters," which adjusts NPC disposition depending on how your character is dressed, so with the sack cloth and the rusty iron helmet, he's getting a disposition of Zero with a lot of NPCs. You'd be surprised how rude they can be, if they don't like you. :)

be an orc, wear nothing but a loincloth and live in the swamps of dementia.

never visit towns, never speak to NPC's, eat wild food, live in a shack.

You can try playing a character with a mission. Such as a private war against necromancers. Their mission will be to clear every necromancer dungeon in the map. Or Goblins, Marauders, etc...

You need to roleplay as Charlie Sheen, and always do 7 skooma bottles a day, cause thats how he rolls.

Don't forget a companion mods to add his goddesses.

I played an Argonian who was completely bat [censored] insane, and would go around wearing no armor or gear, and punching everything.
I had to lower the difficulty significantly :P

Blackwyn
Blackwyn is an Argonian assassin from Black Marsh. He was getting paid tons of money to kill people. He killed Khajiit for free because a group of Khajiit thugs took over his village and beat his girlfriend Annaig to death. They knew that he was an assassin so he had to flee the country and try to restart. He went to Cyrodiil hoping his Black Marsh won’t go looking for him there.
Starting over in Cyrodill was hard for him because the Guard system is way more advanced than The Black Marsh. He couldn’t find a break. Then one day he saw the Khajiit who killed his girlfriend alone with none of his other thugs. Blackwyn took the opportunity to kill him. The guards saw it happen and then threw him in jail.
Then once the emperor was assassinated and Blackwyn escaped form the sewers he wanted to just lay low and hide until he was trained up enough and skilled enough to make his Assassin fame in Cyrodill. He crossed the river and decided to hide out at Vilverin. But after killing two people who occupied it, someone came with a not and gave it to him. When he read it explained his whole past about his ancestor Greywyn and how he is an exact descendent of him, And how Greywyn left him a lair called Deepscorn Hallow.
Blackwyn decided to go there and check it out. After he got it refurnished he found the gear that Greywyn was talking about. Blackwyn vowed to worship Sithis and the Crimson Brotherhood and take down the Dark Brotherhood.

Class: Crimson

Birthsign: The Mage

Stealth
Strength & Intelligence

Major Skills: Armorer, Acrobatics, Blade, Sneak, Light Armor, Illusion & Alchemy

Apperance: Blackwyn is never really seen in public because he always has himself invisible. But if he is seen he usually just wears a hood and robe ( Mythic Dawn ). But when he goes out to kill or do a mission he will switch to The Crimson Raiment with out a hood. Because he hate the Dark brother hood and is only with them so he can make sure all of them die. And eventually become Master and run it in the ways of The Crimson Brother hood.

Guilds: Dark Brotherhood, Thieves Guild.

Races he likes: Other Argonians and Bosmer, Altmer, Dumner and Orcs

Races he hates: KHAJIIT!! Imperial, Breton, and Nord.

When bored he likes to snoop around, sell things, kill people he doesn’t like, Swim and hang under water, Train his skills, Go to his lair ( Deepscorn ) and hang out, Go to Dunborrow Cove and hang out.

Any heavily armored warrior with spellcasting powers and a good cause may call himself a Crusader. Crusaders do well by doing good. They hunt monsters and villains, making themselves rich by plunder as they rid the world of evil.

A Crusader is fun and easy to get into character.
There is a pre-made Crusader class, but I don't see it as a requirement too use it.

How about playing a Breton-Apprentice-Witch hunter.

There was a topic about last month stating that Breton's are too powerful because they resist to magic.

Well to overcome that instead a Breton-Mage how about a Breton-Apprentice which a Apprentice have 100 weakness to magic.

Also being a Witch Hunter you have a bow and destructive spells for offensive.

What I typed in the first line that is my character that I am playing.

I never use a mallee, I never touch strength when I level up. Still at 35 at level 31
Being a low health character (Starting health at 53 now at 200 and something), my character wears heavy armour and repairs stuff to add points to endurance ( at 90 at level 31) when I level up which controls heath.
