Please don't let this be a console war ... =/
My two cents is that I never had any terrible problems and I play on PS3 (uh .. .two ... PS3s to be precise), with two different versions of each game. Some annyoing lags and bugs, but nothing that ever stopped me from finishing the game. First version of Fallout 3 worked fine, froze in places but nothing that I didn't quickly get used to and accept. Second version worked okay, but very nearly finished due to Broken Steel crashing multiple times, admittedly - worked around it eventually, I guess. First version of New Vegas was a pre-owned copy, so I expected to have minor problems to begin with, but nothing dramatically different to my first version of Fallout 3, aside from a couple of quest script bugs. Second version of Fallout: New Vegas has worked the smoothest of the lot, but on the onsole I have Dead Money installed on, it was prone to freezing every 10 minutes or so prior to the latest patch.
I think that are plus points and minus points to playing on both consoles. Just from surfing The Vault Wiki, I've seen some pretty irritating bugs for the 360, though these affect specific missions more than the game as whole. Bummer if you're going for (as close as possible to) 100% though. Similarly, I've read about some equally irritating ones for the PS3 which, admittedly, I've never been on the receiving end of, but have the same potential.
If you want to play Fallout, and think you'd get your money's worth through buying again, then I'd say to go ahead and pick it up for the 360 - you should get a good deal on Fallout 3 and New Vegas right about now (I've seen it for a decent price in several places). Might be an option to trade in your PS3 versions?
