I wonder if it may be due to the various playing styles people adopt. Certain parts of this game are quite non linear and you are free to explore the world in any way you want, this must make developing the game hard simply due to the almost limitless way in which bugs can be created.
If a player does somthing the game does not recognise then the engine may not know what to do and try a number of things before ultimately freezing. This is the nature of the beast with these types of games and usually the resulting action is the dreaded getting stuck in a wall unable to get out or some other similar mechanic whereby the player is usually forced to restart the level.
It must pose a huge problem for the testers, imagine, having to carry out every possible act a player might try in order to see how the game/engine will react to that input.
Its the only thing i can think of that might be causing these freezing issues.
