Dark Elf, Fire Destruction/Fire Atronach/Fire Shield.. any one have ideas?

Well, dark elves are naturally fire resistant, so from a role playing point of view, it makes a lot of sense. I'm not really sure what you're asking.

The Fire Shield spell was removed in Skyrim but you could go for a tiny bit of archery+alchemy making those poisons (if that's even possible, maybe they can only be found, I don't really know) that make your target weak to fire (unfortunately the spell for that was also removed in Skyrim) so you can blast your enemies better. Kinda like throwing oil at your target before lighting them up.

Or get a Dark Elf follower with some enchanted fire resist gear.

Sounds like a fun idea Farius, I always like themed builds over min/max ones. Perhaps wield a fire enchanted weapon as well? And look for some red colored gear?

Beware, if you lean on fire so heavily you'll run into opponents that you can't harm. It's rather tedious finishing some missions.

For that reason I picked up perks for fire AND ice.

To solve the follower issue, (1) get one without a shield so she/he spends less time shield bashing (2) give him/her weapons with life leech (3) give gear enchanted with fortify stamina [edit: i meant health] and resist fire/frost. When your follower is only taking 20% of your AoE damage, you can pretty much let loose until she gets knocked down.

The fact that they're level locked makes it worse, so be sure to pick up new followers as you find them.

or theyll turn on you in the middle of the fight with epic boss like a dragon or a Giant

That's the way I've been playing. I'm also a Dark Elf destruction mage. I started with fire, but I did eventually max the destruction tree. I think it's a bit of a gimped build, but I'm enjoying it. Take heed of what zakaluka said, though. You will be fighting other Dunmer and other fire resistant enemies, so you're going to want the option to switch.

That ability doesn't scale very well as it doesn't benefit from destruction perks.
