I am at the moment with 359.00, the version after the Fallout 4 recommended
Is it better stick with these or keep updating to new ones, does performance improve with latest ones?

In general, it's usually best to keep your drivers up to date, unless there is some sort of known issue with the newer ones. Plus, if you do happen to start having issues with a new driver you can always just revert back to the old one.
considering the too many variables with performances around this sort of game, once you stumble in what one can consider an issue it's hard to tell what is the cause. Normally I updates drivers as they come available, but in this case seen Bethesda still trying to solve some performance issues with their engine with patches I am a bit cautious to introduce even more change. I will probably stick with these and once these last patches goes live I'll try to update. I was merely asking for feedback from some who tried the latest drivers if they have seen any improvements; especially with the stutter in the interiors when strafe circling, the most annoying thing at the moment.
The latest drivers (359.06) have sli compatibility but it's lazily done. They just used an existing profile that still has a black face bug associated with using sli on any of the current drivers out there. Also nvidia admitted in their official forums that bethesda need to implement a change that only they can do to fix many issues. I tested the frame rate using the new drivers and there was no increase but if you have sli and have not been using custom sli bits like I have from the launch day then you might see a dramatic difference in performance, however on a single card there is no difference whatsoever.
It's highly likely that bethesda will not fix the black face bug because fallout 3 had an issue with the sky flickering while using sli and they never even bothered to fix that! They outsource modders to fix these kind of problems for them to save a buck.
Yeah uh.. keeping your drivers up to day is not "so much change" that it's going to ruin the stability of your game. Waiting until patches and then doing it is kind of pointless.
