I know PC's are better for modding but i prefer the simplicity of consoles.
And PCs are actually pretty simple these days too. You can buy a decent prebuilt that will run Skyrim at high or ultra settings for maybe twice what an Xbox One will cost.
Pro's and con's list...if the "pro's" don't out-weight the "cons" then I wouldn't buy a X-box1 just for two games... that said.. I bought my desk-top for 1 game...Skyrim. Now I bought the Anthology so I have all the TES games and I bought Dragon Age: Inquisition.. but only because my 360 fried. and my husband is stingy with the X-box1 use ( just kidding).
Seriously just make a list and think about it... My reason's for buying the PC was armor's and body mods... I do tend to push the limit on my graphics, but I could live with that being mostly vanilla.
Personally I would save for a PC they can be simple to use... simpler to play, with less issues IF...IF you read the read me's and descriptions of mods ( you have to with consoles also or have issues) LOOT, SKSE and a mod manager ( NNM is in my opinion easier for a beginner to use) They make it easier than a console atm....
Using mods on Xbox One has been a great experience for me... But I wouldn't spend $300-$500 on a new console just to play with mods.
on my Xbox One slyrim se, i have over 4 gigs of mods. fairly stable. if you are really into mods, it is worth getting a Xbox One. and fallout also allows mods. the Xbox One will allow more and different mods. so far there are two games that can be moded on consoles. but there might be more in the future.
Oh...and of course depending on your gaming style having different consoles can be a good thing... I know my Hubby bought the PS3 because a game he wanted to play was exclusive on it. Pretty much we have a PS3, PS4, X-box 1 and my PC.. would have a 360, but it went up in a puff of smelly smoke.
