questions about meshes and textures

it appears i may have to either use an existing mod or create a new one from scratch to get the expanded varieties on farm animals i want with various colorations but since i dont know how and i imagine its probably too complicated a topic for the quick questions thread i made this thread...if anyone has a link to accurate tutorials preferably in text as well as a version in some sort of vid example tutorial that would be great. of course helpful responses of any kind are always welcome too.

but what i need to know so far as im aware of is how to create a mesh in blender for animals shapes then how to texture them (i have photoshop tho im not familiar with navigating it at all and i also have indesign which i have minimal experience with and i have blender installed on my pc tho its prolly a older version than whats now available) and then i need to know how to animate them either in blender (which is prolly best since i would be creating the meshes in blender) or else with q-avimater (which i only know basics of how to do human avatar animations with that program and i hate that program because it takes hours to make someone sit down then stand up)

oh and i also want to create meshes for giant boulders and mountains and then texture them...yes mountains or at least very big boulders i can pout together like a mountain so any tips on how to do that will be great too...basically i need a believable way to seperate spaces without resorting to putting castle walls everywhere in the wilderness and i dont want to try and use height map editing for this.
