I have yet another question that just has to be very basic. I was assigned Lydia as a Housecarl. I have read where people have her hold inventory items, yet I cannot seem to figure a way to give her items. If I do give her items to hold and I leave her behind in a city, will she have them and return them to me when I get Back? Of course that's provided someone can tell me how to give them to her in the first place.

She'll hold onto your items even if you depart.

Not sure about others but I don't see why not.

You talk to her, ask to change items. First you have her inventory, so scroll down till your character name appears, choose an item to give and press the ''give'' button. I'm on xbox and I have to press ''X'' to give the item. And yes, followers don't loose your items. Just remember where they are.
