Recipes for Canned Salmon

So I've just got back in from training, and I'm sitting here eating half a tin (100g or so) of cold Alaskan pink salmon, with some slices of cucumber on the top, and it's kind of... egh. I eat it quite often and it's geting a bit boring, and isn't especially tasty.

All the recipes I could find online either require a lot of ingredients I don't have or want, or are ridiculously complicated, or both. So keeping in mind that I'm a terrible cook and don't want to spend much time just preparing a meal, do any of the culinary experts, chefs, or helpful people here have any ideas for simple recipes w/ canned salmon?

I thought about some kind of salad, but adding cucumber is about as creative as I've got so far.

Diced onions and bell peppers, mayonnaise, ketchup, cayenne pepper and curry powder. Add all to taste and mix.

I'm quite fond of Salmon spread.

Cream cheese, chopped green onions or chives, horseradish, lemon juice, salt, pepper and a bit of dill all mixed up, a dallop of sour cream added and spread on crackers. Or you can spread it on flour tortillas and roll them up and slice them.

Here is another:


Alaskan Salmon Bruschetta

1 can Salmon
1 clove garlic, peeled and smashed
1/2 cup of tomatoes
1/4 cup thinly sliced fresh basil
2 tablespoons feta
1/4 cup extra virgin olive oil
12 slices baguette, cut on the bias 1/2 inch thick

Preheat the oven to 400F. Combine the tomatoes, basil, feta, and salmon in a small bowl. Set aside. Brush each slice of bread on both sides with olive oil. Place slices of bread on a cookie sheet and toast in the oven until well browned and crisp. Remove from oven and let cool to room temperature. Top each slice of toast with an equal amount of the salmon mixture.

You can also make a nice salmon chowder or salmon patties. I almost live on salmon and would if not for moose.

What kind of vegetables and starches do you have?

Potatoes, rice, tomatoes, carrots, spinach, onions, lettuce. Various beans. Mushrooms, if they count. I especially like kale, but I never have the patience to steam it for a snack.

Edit Thanks summer! I didn't think to use it in a spread, I'll give that a try.
Your bruschetta recipe looks too complicated for me, though. :unsure:

Alfresco canned salmon

Ingredients

  • Tin of salmon
  • Can opener
  • Fork
  • Outside


Preparation

Open tin with opener, taking care not cut fingers off. Go outside.

Serving

Shovel salmon into mouth with fork.

Caution

May contain fish.

A delicacy in my family is fried salmon patties. Add one egg and enough flour (or breadcrumbs, whatever you have) to bind it together enough to form a patty, it doesn't take much. Put the patties in a skillet of hot oil and cook till crispy and light brown.

Excellent with biscuits and gravy and scrambled eggs. Or as a sandwich. Or however you want to eat it.

Another idea is a spin on tuna casserole. Just substitute a can of salmon instead of tuna. I'd recommend using the more buttery Ritz crackers instead of the more typical saltines for the topping, the flavor is much better.



Also, http://www.allrecipes.com is an outstanding resource no matter your cooking skill. Just punch in 'canned salmon' and wander through the results. You're sure to find something.

My favorite salmon patties consist of salmon, cracker crumbs a beaten egg, salt and pepper then shaped and fried. You can also use some left over mashed potatoes instead of breadcrumbs or cracker crumbs. Yummy...oh and I dice a bit of onion in mine as well.

And creamed salmon is good. Make la cream sauce (Bechamel ), add salmon and serve over biscuits or toast.

Another:
Alaskan Smoked Salmon Chowder

2 cans Captain Jim’s Gourmet Alaskan Smoked Salmon
1/2 cup chopped onions
1 clove garlic, minced
2 cups low-salt chicken broth
can (13 oz.) milk
2 tablespoons margarine
1 package frozen corn kernels, thawed (or a can of corn)
? cup chopped celery
1 cup diced potatoes
1 cup diced carrots
? teaspoon thyme
? teaspoon black pepper

Drain and flake Salmon, reserving liquid. Sauté onions, celery and garlic with margarine, in a medium saucepan. Add potatoes, carrots, reserved salmon liquid, chicken broth and seasonings. Simmer, covered for 25 minutes, or until vegetables are tender. Add flaked salmon, milk, and corn; heat thoroughly. Sprinkle with minced parsley to serve.

Haven't had canned salmon in a while, but the recipes are making me hungry.
We buy bags of wild caught salmon fillets and have it 3-4 times a week, every week.
No fancy recipes though. I use olive oil or spray oil on a griddle and sear them with worcestershire sauce (what's-this-here sauce?), flip it over a few times....done.
Last night we were out of the whats-this-here sauce (Lea & Perrins is the best) and I simply used soy sauce. Tasty.
Must try the canned recipes here (have copied) and apologies to the OP for not being able to offer more...

I eat fillets too (salmon and haddock), always with soy sauce. :thumbsup:

My mom used to make some really good fried salmon patties. No idea what the recipe was though. I'm sure it involved cooking oil and some kind of badder.

I make a mean salmon patty myself. I like to use crushed saltine crackers, a beaten egg, a dab of mayo, a bit of lemon zest and some dill. Some sour cream with lemon juice and dill is a nice sauce to use with them.

Sorry I don't really measure things much, I just wing it.
