Req - Crafting a style of Armor from a material, rather than : V

I'm currently wearing Steel Plate armor. I love the look of it, however, I would love to have the armor stats of ebony or daedric.
Why can't I craft the look of Steel Plate with the texture of ebony? I have no modding experience, but I would think this would be fairly easy?
