I could see nymphs in Skyrim: pale skin, eerie black eyes with twisted black hair, creepily smiling, wearing a wolf pelt corset and a ragtag tail woven short skirt.
You'd see them prancing about like Oblivion's deer, only when you get close would they change their movements to be more akin to a spriggan or a runway model.
If they did show up I picture them to be a part of the radiant story system. Like seeing one in the distance in the wild and deciding whether to follow her or not.
If you did follow her and knew their language (by lets say reading a book about them) you could talk to her about hidden locations on the map, nymph lore or even play a riddle game (the prize being for you the 'priize' or for her, your life - instant death), if you didn't know the language then it would be a simple ambush from some nymphs.
Since Daggerfall I always thought the nymphs were a dangerous beauty - stay for too long around them and you might just become their next supper.

Hopefully they do turn up in Skyrim, as I would like to see more variation when it comes to non-playable races and it'd be fun to chase them around the wilderness.
