question really is, can I wear a cloak made of a one and get to ride one? I don't really know the lore of tes well but it might happen. Many, many things happen over a 200 year period. but yeah, if I get to kill it, I want to ride it. (goes off to kill a golbin and thus being able to ride one)

It would be a bit goofy so i say no. Horses will keep me happy enough if there in game. One question i have about mounts is will there be mount combat. Ex when some1 attacks me i don't want to take 5 seconds dismounting then fighting like in oblivion, Id rather just slice there head off as i ride bye.

Mammoths have been comfirmed, but lets not get carried away about riding them. Just like dragons, if riding dragons and mammoths is not in the game, eventually someone will make a mod for it, so yeah, eventually, im sure you could ride mammoths.

now riding a giant should be like riding in a car, sitting on the shoulder of the giant maybe. then it would chuck you into a rock so you would be between a rock and a hard place.

Elephants can be pretty bad-tempered and kill 600+ people a year (which makes them the worlds 5th deadliest animal)
