Role playing rubric

I have three RPG's that I wish to explore this year, Fallout New Vegas, Skyrim and Morrowind. I cannot find myself to play an RPG anymore if I do not have some kind of Role playing foundation for my character. I am new to role playing the character (or at least I've tried; but having set limitations and morals they might live by would fit properly a character in mind where one can actually build a relationship with the generated character). Jack of all Trade builds ruin it for me due to the lack of personality on characters I tend to create. I was wondering if there are any Role playing rubrics out their that I can build my characters upon. If you do not know of any then maybe those experienced in role playing can give me some personal tips/opinions that you use in the process of creating a character. When it comes to the Elder Scrolls series, I like to look at the builds given by the generated "class" system and base my character around those ideas, picking one that interests me.
