Should I just switch to the thief stone?

Im playing a nord sword n board warrior. I currently have the warrior stone activated but Im finding myself a little weak for defense. Im only level 8 or 9. I don't want to use magic. I also play realistically, as in, would some one be able to do this kind of way, not "ok well just hotkey"

If You are trying to have Skills covered by the Thief Stone level faster, then switch to the Thief Stone. A Warrior hunting Game would use Sneak, and many of the Perks in Sneak are not just for a criminal. I switch between the Mage and Warrior Stone on My Hybrids specifically to keep Conjuration and One-Handed equal.

EDIT The Lord Stone gives defence against Melee and magic damage, and there are animals that can be used to raise defensive skills

Spoiler
Mudcrabs, Skeevers, and Wolves can be exploited for training an Armor or Block Skill

The warrior stone will help you level faster on your fighting skills. If you head a little farther south, you'll find the Lady stone on a small island in Lake Ilinalta, due north of Falkreath. It'll make you regenerate both stamina & health 25% faster, very useful for a fighting character. Slightly south & west of Solitude, you'll find the Steed stone, which is really good for those using heavy armor. It lets you carry an additional 100 points of weight, and the armor you are wearing doesn't weigh anything or slow you down.

For thieves, I've found that the Tower stone (between Winterhold & Dawnstar) is very helpful, its greater power is that you can magically open an expert lock once a day. This makes Thieves Guild much easier for an early character, but it is also useful for a warrior who doesn't want to spend a lot of time picking locks.
