Truth be told, I don't have a medical degree, nor do I have a scientific test to know for sure, but I do believe ambidexterity is more a matter of being born that way than talent, not unlike being left-handed or right-handed. I personally played Hockey left-handed all my life, but broke my stick, and upon receiving a right-handed stick from the bench, continued on the play with absolutely zero detriment. I never practiced being good both hands, it was just that way. Most players arn't like that, and need their correct stick side to play (And may even hold the stick backwards just to keep it in their preferred hands). The same talent doesn't apply to my one handed abilities, as I'm fairly useless at drawing and writing left-handed, but fine right-handed.
Although I also seem to recall people throughout history learning to write using both hands (Ambidexterity) by practicing it as though it were a talent as well. Not really sure how one would implement it. Knights of the Old Republic had an ambidexterity skill though, I remember.
Whatever way it's implemented will be fine in my books though.
