I couldn't find any documentation about how to show the date and/or time, without pressing the "t" key or resting. Does this exist in the game?

But no, not in vanilla. There are -- as to be expected -- a number of mods however.

T was the default rest key, oddly enough. You must have remapped it to R (I did too).
