They are: Alteration.
Block
Lockpicking
Pickpocket
Speech.

If you use melee and shield do you find not investing in block effects combat much? Im just curious
I have never perked these skills on any character:
Alteration
Enchanting
Illusion
Heavy Armor
One-Handed
Alchemy
Lockpicking
Pickpocket
Speech
Alchemy
Picpocket
Lockpick
aaaaand that was it.
Two Handed, Block, and Heavy Armor.
As you can guess, I only play Mage and Light characters.

You weren't kidding when you said you deeply specialize with your characters.
I've perked them all depending on the character type...
But for my current jack-of-all-trades I've not touched lockpicking or pickpocket only... Enchantments basically sort those out if absolutely necessary...
I've perked them all also.
Speech the least though.
With 4 characters I have never had perks in
Block
Illusion
Conjuration
Alteration
Lockpicking
Block
Those are the only two Skills I've never put even a single Perk point into.
Lockpicking: Why? You don't need Perks in it except for RP purposes. As long as you can handle the mini-game, every lock is your for the opening.
Block: Never played a Sword-n-Board in Skyrim. If I'm not running a Two-handed annihilator, then I'm dual-wielding.
+1, depending on my character, I've been perking every single skill.

A few things I've only perked once or twice. Level 61 and I have 4 perks still to use when I decide where I want them.
Or two handed,but everyone has there own playstyle.
I don't know how you've never done block before haha. To me, block is probably one of the most useful perk trees in the game, but that's just my opinion.
I've now played around 2000 hours of Skyrim, and some skills ive never spent a single perk into are:
Speech
Lockpick
Pickpocket
and that's it. Everything else I have used before, these three trees seemed the most useless to me. Speech and pickpocket have some redeemable qualities to them, but ive never brought myself to spend the few perks in order to get them.
Lockpick on the other hand is a completely useless perk tree in basically every way. Though most of my characters end up with 100 lockpick without using a single perk. (May god have mercy on the soul of whoever spends a perk on "make novice locks easier")
