The ore veins are still there, but you can sometimes walk trough them. You cannot mine them manually or interact with them. The bug happens like so:

1. You create a save before mining the ore vein

2. You proceed to mine the vein until it is depleted

3. You die and restart from the earlier save

4. The ore vein is now bugged and cannot be mined
