Balok, who made the great http://newvegas.nexusmods.com/mods/40433and http://newvegas.nexusmods.com/mods/43757/ mods for New Vegas, and is now working on a pretty http://www.gamesas.com/topic/1313928-wip-helgen-rebuilt-project/--I'd like to read about making the switch from scifi/New Vegas to fantasy/Skyrim modding, and his apparent passion for letting the player rebuild things!
Not a modder as such, but http://www.gamesas.com/user/780927-viridian-echo/has been a voice actress on several interesting Skyrim mods, and she's a very charming and witty writer, so I think she could provide an entertaining and informative interview from a slightly different perspective.
As far as Oblivion modders, I think Lanceor (http://oblivion.nexusmods.com/mods/42490, "most-endorsed Oblivion mod of 2012") would be a great choice--get more people buying the back catalog by showing the excellent adventures still being made for it.
For Morrowind, I was thrilled to see recently that the creators of two of my favorite mods, Kateri (http://www.gamesas.com/topic/1452298-relz-julan-ashlander-companion-20/) and Stuporstar (http://www.gamesas.com/topic/1441360-wip-uviriths-legacy-overhaul/) are both updating their signature mods--I think it would be interesting to talk to folks like these two, to see what keeps them coming back to the game and to their projects.
