A speed run is basically just beating the game as fast as you can. There are many youtube videos of speed runs.

A speed run is finishing the Main Quest chain as fast as possible. I'm not really surprised BGS has competitions like this.

Which means everything has to be in place and ready to go. Probably a really good way to bugtest too.

Finish the main quest in a new game as quickly as you can, to make sure the latest changes to the game haven't broken anything major like that. They apparently used to do that every Friday to test the new game version of that week. The fact that they stopped doing this this week is an indication development has arrived at a different stage, one could interpret it as Bethesda is done adding new content and features to the game. What's left is (minor) bug hunting and other logistical stuff.
