I doubt Skyrim will be the last Elder Scrolls, the fact that the previous plots are revealed to have been signs proceeding Skyrim doesn't mean they can't make more games, after all, they don't HAVE to tie the stories together, the fact that one story follows another in the same setting is enough of a connection, really, it's okay to have two events in the same setting without one being the direct cause of another. And they can still tie future games to Skyrim, maybe the next game will tell us what kind of impact the events of Skyrim had on the setting. In any case, it would be quite a waste to end the series here, as it still seems to be doing pretty well so from a business perspective, it would seem wise to continue making the Elder Scrolls games, and I'm sure Bethesda can still come up with ideas for plots that fit the setting, especially since they don't need to worry about whether they can top the threat of the past game since each game has a different protagonist, so the new game doesn't need to have a more dangerous enemy than the previous one to ensure that the antagonist can still be a threat, not to mention there's still quite a few provinces we've yet to have a chance to explore in detail. I'd be quite dissappointed if Bethesda decided to end the series here.
Keep in mind, though, this doesn't mean we'll see an Elder Scrolls VI soon, because I suspect that Bethesda will want to do Fallout 4 after Skyrim, unless of course they make the rather unlikely decision to let Obsidian create all future Fallout games, but regardless, I see no reason to doubt that we WILL see another Elder Scrolls game after Skyrim, just as I was sure we'd see one after Oblivion. It's simply a question of when Bethesda will get to it.
