I never did much slaving in FO3 (aside from one character who was a total sociopath), but I do admit that I sometimes wish I had the opportunity to do so in F:NV, especially as it would make sense for some Legion RPs.
One thing about it in FO3, that didn't bother me at the time since there was nothing to compare it to but does seem odd in retrospect after seeing Dermot's Ledger during The Coyotes, is how you always got paid the same amount for each slave, regardless of age or condition.
For example: in FO3, a fully-healthy prime-aged slave paid just as much as some useless sickly crackhead or a feeble oldster. Dermot's Ledger, on the other hand, shows varying rates depending on the age and gender of the slave, as well as the preferences of the buyer (this last was fairly limited, but you can see differences if you look closely). The ledger also shows that in many cases they had to get rid of anyone who might keep them from carting off the slaves, while in FO3 all you had to do was be HIDDEN while zapping the target and then tell them to run off to Paradise Falls, which they would always reach unless in certain exterior cells.
While not a fan of slaving, I wouldn't object to it being present as a natural adjunct of Legion activities, since it is a major aspect of their culture; I would want it to follow similar lines as laid out by the ledger, since that would give it a logical basis. In other words, if we are permitted to slave, then the client(s) would want specific types and numbers thereof, with the associated risks/profits involved in their capture and transport.
